Chicken Pot Pie: Skool vs. School

I am discovering there are two schools of thought when it comes to pot pie...old school and quick skool.

I get the old school methods. Boiling the chicken. Making the stock. Real butter. Heavy cream or whole milk. Using roux as the sauce foundation. Fresh chopped veggies and a homemade crust.

But the Quick Skool. Yeah, that's right s-k-o-o-l! Who has time to spell correctly? Quick! Hurry-- you've got things to do and people to meet, etc. So these recipes are basically recreations of the store bought version. Overly salty. Devoid of real flavor. Canned veggies. Canned biscuits or crescent rolls. Canned condensed soup. What's the point--just get a Marie Calendar or Stouffer's product and call it "dinner." Hell dust some flour on your cheeks, counter and clothes to give you that homemade feeling?! But don't say you've made homemade pot pie if you use the quick skool method well that's just shameful. It's mediocre at best. Now go stand in the corner and think about your actions!

I chuckle at my own self. While I haven't made it yet. I am leaning toward the old school method. I mean if I am going to spend the time in the kitchen, I want to make it worth my time. I want to create something satisfying, nourishing and delicious. And most important--it must be memorable--in a good way. I want The Boy to pedestal my pot pie as the gold standard for all other pot pies that he will consume. Many of the stories and recipes, I've read raved about how their mothers and grandmothers made the "best" "most amazing" and totally awesome pot pies." It conjured up feeling of home and love and hugs.

It will take years for The Boy to fully appreciate the effort. Hell, he barely eats mean. But he'll hopefully enjoy picking out the veggies and savoring the smooth creamy luscious sauce.

I am combining the pot pie recipes of Martha Stewart, Emeril and The Joy of Cooking.
There are plenty of variations. I plan to explore later. But for the first one, I have to stick with the experts.

HFCS...a necessity

I opt to keep this substance out of my diet, as much as I can. However, I just had some "organic ketchup."

And I am convinced...hfcs...is necessary to make ketchup taste good.

there's not doubt about it. the taste is just off without it.


i tried the whole food brand...and it's just N-A-S-T-Y!

yes, i am being dramatic...but i won't waste my money organic ketchup.

:-( me hate sick

No pot pie! No food holiday! No cake! I spent my super sunday sick and caring for the boy. hubby did bring me some goodies but they were tasteless. My taste buds are dull from medication. i have more mucus than a snot factory. and worse yet, i don't have a sexy deep voice...I sound like a man.

on a positive note, i no longer have a fever. i am not achy. and i am outta bed.
today, is a nice warm day. however, it's awful for my "new" hair.

Delayed Pot Pie

While I am still searching online and my cookbook collection, I have yet to find a recipe that tickles my fancy. However, I just realized, this Sunday is SUPERBOWL SUNDAY! My favorite finger food/snacky-pooh holiday. Unlike Christmas and Thanksgiving, Super bowl Sunday is all about grabbing a bit of this or that and watching the game. It’s not fussy. No decorations, no presents, no big meal to prepare, no table setting. Just grab a bunch of stuff for folks to graze on. If you’re lucky enough to be the host(ess), you get to keep all the extra libations. I usually only catch the half-time show. Plus The Boy will be in tow, which means I'll be watching someone, fuzzy and red.

Mr. Edd (lolol-I couldn't resist) is planning a tailgate party complete with “…meatballs, ribs and plenty of brew!” I am sure there will be other stuff, but I stopped listening after "ribs and beer."

ISO: Chicken Pot Pie

Last weekend, the family and I went to E&M’s housewarming. I love this type of social occasion! You get treated ‘all VIP’, cocktails, yummy treats and meeting new people. I rediscovered Bailey’s and coffee. The sweet creamy texture mixed with the strong flavor of dark roast. Delicious! Even had a bit of Jameson on the rocks. It wasn’t totally horrible but it won’t replace my KoKo’s Margarita anytime soon.

I was able to meet M’s mum, Mama-Cumberland, and her sister, the Preacher Lady. The boy was entertained by their little peanut, Baby J. There were plenty of TJ (trader joe) treasures to nibble on since M doesn’t do too much ‘kitchen switchin’.

Her mum and I had a delightful discussion about Chicken Pot Pie.

Homemade pot pie like baked whole chicken is one of those illusive and magical things to me. Yes, I just learned how to cook a whole chicken in 2007. Thanks Leslie! I attempted it several times before with disastrous results.


While we had a lot of homemade meals growing up, chicken pot pie was not on the radar. We often had the single serve 3 for $1 variety. I can’t remember the brand. They came in chicken, beef and turkey flavor. The turkey pie tasted rubbery and the pie with beef was tangy. The chicken was just right. Banquet? Swanson? Gosh I can’t remember! Sigh…anyhoo, they were tasty. I just hated that it took 45 minutes to bake in the oven. This was before microwave cooking was popular. You knew you were supposed to wait 5-10 minutes for it to cool. However, you were so greedy to eat it after watching it bake/bubble; you took the tongue burn. I could have just eaten the warm salty soupy-creamy filling and the crust.

Mama Cumberland and M collaborated on a homemade pot pie for our main course. M new to cooking was all about following the Joy of Cooking recipe. Mama Cumberland is old school using “a pinch of this and a pinch of that.”
The collaboration yielded a fair result. I prefer more crust and creamier filling.

Mama Cumberland and I agreed, while you can add leftover or frozen will do, fresh veggies sautéed and seasoned are best. She grows her own veggies. My best attempt at growing my own garden was potted herbs in the window ceil. After about a week they were all dead. Living in the city, I fear if I grow a garden it will become a smorgasbord for the super-sized rats! I wasn’t blessed with the green thumb; plus I hate bugs! This is why I leave the farming to the farmers. Thank God for the farmers market!

Mama Cumberland recommended I use a whole chicken. This way I can use the stock to make soup as well as a pot pie. A two-fer! Gotta love that!
Now I think she want a little too far suggesting I have to make the crust from scratch.
I am sure TJ or whole foods has it.

This week in addition to viewing Martha’s Baking Secrets on Netflix; I am researching pot pie recipes. Next Sunday, main course homemade chicken pot pie and possibly revisit the Red Velvet Cake.

Unlike when I was seeking the perfect sweet potato pie recipe, I won’t test 4-6 different recipes. I swear I had sweet potato pie coming outta my hoo-ha! I think I made 14 plus pies over the holiday season. I’ll have to post that experience soon.

yeah...anyone up for an adventure? lol

My hubby sent this to me. My first thought was WTF! I mean really…deep fried Oreos?
What’s really going on? I will admit, I tried a deep fried Twinkie last summer at the Fells Point Festival. I initially heard about it from the Food Network. So the warning should have been the –we cook everything in this grease. It was tar black. They cooked the Twinkies, HoHos, funnel cake, corn dogs, fries…everything came outta the same grease. The texture of the Twinkie was greasy and slimy at the same time. It was super sweet. I wouldn’t say it was good, but it wasn’t horrible either. I don’t think my body has digested it yet!! Needless to say, after 2 few bites, I dumped it and opted for my usual -- funnel cake.

HFCS and Fast Food Joints

The boy, Purple Princess and I went to Chikfila this past weekend. We were supposed to have a proper lunch/dinner with Aunt Kiki and Nana but they were off doing their thing. I like the one in Crofton because it has that playpalace. I figured I'd do the healthy thing and order a salad with a low-fat dressing. Well imagine my surprise, as I am shoveling salad down my throat, when I read the salad dressing not only has "transfats" but "sugar, high fructose corn syrup and corn syrup." WTF!
